A “very French” list mainly of white wines
Le Bar à Huîtres has 150 mainly French wines on its list. The following wine-growing areas are represented: Champagne, Loire, Alsace, Burgundy, Bordeaux, Rhône, and Provence. The grape varieties for white wines are Chardonnay, Riesling, Gewurztraminer, Sauvignon blanc and Sémillon. For red: Pinot Noir, Pinot Meunier, Merlot, Cabernet Franc, Cabernet Sauvignon, Merlot, Malbec and Petit Verdot. In the main, the wines found at Le Bar à Huîtres are the result of blending two, three or even four different types of grape. However, a few single grape wines are available such as Pinot Noir or Chardonnay like the New World wines.

Young or old wines but decanters made by Riedel
A wide range of wines from 1988 to 2009 are on this wine list but all of them have been meticulously selected. So that each bottle served gives its very best flavour, it is the custom at Le Bar à Huîtres to offer to decant the wine. Garry Dorr put his trust in Riedel, the Austrian glass company, which supplied him with an impressive collection of decanters in every shape and form so that each wine can bloom at your table. “Decanting young wines is a sign of confidence, for old wines it is a sign of respect”
