On 1st July 2010, Garry Dorr took over Le Bar à Huîtres and its four legendary sites from Jean-Pierre Chedal : Montparnasse, Place des Vosges, Saint Germain and Ternes. This young entrepreneur, aged 26, has worked for Alain Ducasse at the Plaza-Athénée, Joël Robuchon at the Hotel Métropole in Monte Carlo, Louis Gondart at Drouant and Jean-Jacques Jouteux with whom he has been devising his menus since 2007.

 New wave, new restaurants

Passionate about seafood in general, and oysters in particular, he dreamed up the new Bar à Huîtres with decorator Pierre Canot in remembrance of summers spent in Le Cap Ferret and of eating oysters from the Banc d’Arguin with friends. 
A trail-blazer regarding "Grand Cru" oysters since 2010, Garry Dorr has vowed to offer the finest selection of oysters in Paris. His explorations and his tour of France to the oyster beds enabled him to bring together “shells produced on a small scale and exceptional delicacies”. To add to this essential groundwork, and not to spoil the enjoyment of the shellfish by opening them wrongly, Garry Dorr called on the best shellfish specialists in Europe, with trophies to show for it.
Founder of the d o r r PARIS name in 2011, he calls on the expertise of the d o r r Team to serve his customers so that each visit is a unique experience. On the menu: exceptional products, oyster counters and spectacular indoor water walls, seafood platters wrapped in a cloud of dry ice, menus on iPad, gigantic tanks in which Breton lobster, king-sized spiny lobster, slipper lobster, king crab from the fjords, etc. swim.
